I Like To Bake: Chocolate Chip Muffins

If you know me at all, or follow me on twitter, you will have noticed that I bake an awful lot. My dream is to combine my love of that and literature and open a part bakery part bookstore where I'll spend my downtime writing. But, until then I write for whoever wants to read my work and I bake for whoever wants to eat it. Although, primarily, it's for me. I find comfort in doing both and occasionally lying on the floor but I see the former as more productive as well as being ways to express myself. Write whatever you want and bake whatever you please. As long as you don't offend anyone with your words or poison someone in the process.

Anyway, the point to this post is that I wanted to start sharing some recipes and other things I think you'll enjoy in order to allow you into my world a little more than I am letting you in right now. As I grow, I want this blog to grow with me so I think it's time to expand it to more than just a place for my thoughts. I want to share other parts of me too and I thought why not begin by sharing something I see myself as a true enthusiast of. P.S. If you do end up trying this recipe or any others that I'll be sharing in the future be sure to send me pictures so I can drool over them with you.

Besides the basic kitchen utensils, you will need:
300g self raising flour
1 teaspoon baking powder
50g cold butter, unsalted
80g caster sugar
150g chocolate chips
225ml milk
2 eggs, lightly beaten
1 teaspoon vanilla extract, optional

Besides dancing to whatever music you're listening to, for me it's my anything, everything playlist on spotify, you will have to:
1. Preheat the oven to 185 °C, between gas mark 4 and 5, and line 12 muffin or 24 cupcake cases depending on preference, either will do.
2. Mix the flour and baking powder together in a large bowl. Rub in the butter until it becomes like breadcrumbs and stir in the sugar and chocolate chips.
3. In a separate bowl mix the eggs, milk and vanilla extract together. Then pour the entirety of the mixture into the bowl with the dry ingredients and mix briefly.
4. Spoon the batter into the cases and bake for 15 - 25 minutes or until risen, golden and firm to touch.
5. Cool for a minute or three before serving, preferably with hot chocolate topped with whip cream and marshmallows to keep away the winter blues, and enjoy. They also taste just as good, if not better, the next day so refrain from eating them all at once and store any that remain in a container.

  5. A part bookstore, part bakery sounds so wonderful, so blissful. I don't bake often, but I should. Next time I am up for chocolate chip cookies (my fave btw), I'll be sure to follow your recipe! Thank you for sharing.
